POTATO SCONES 
1/2 lb. cooked potatoes
2 oz. flour
1/2 tsp. salt

Mash potatoes very smoothly. Put flour, salt and potatoes on baking board. Work in as much flour as potatoes will take up and roll out very thinly; cut in rounds. Place on hot griddle and prick all over with a fork. Cook for 2-3 minutes on each side. Cool on a towel.

NOTE: If potatoes are very dry, they will require less flour. Oatmeal may be used instead of flour.
