SWEET RICE | |
1 1/2 c. rice 1/2 gallon milk 6 eggs (beat eggs before putting in rice) 2 tbsp. butter 1 1/4 c. sugar 1/2 tsp. salt 1 tbsp. vanilla Soak rice in cool water for 2 hours. Drain off excess water. Scald milk, when it starts to boil add rice, salt and butter. Cook 1/2 hour, stir often to keep from sticking. Turn off heat, add well beaten eggs, sugar and vanilla. Sprinkle sugar and vanilla over rice first then add eggs. Store, uncovered until cold. If covered while warm it will steam and be runny, not firm. |
