SWEET POTATO CASSEROLE 
1 (30 oz.) can yams
1/4 c. butter, melted
1/2 c. sugar
1 egg
Milk
Nutmeg
1/2 tsp. vanilla
Marshmallows

Drain yams and mash thoroughly with butter and sugar. Beat the egg with enough milk to keep it from being stiff. Add nutmeg, to taste, and vanilla. Mix this with yam mixture and put in buttered casserole dish. Top with butter and bake at 350 degrees until bubbly. For the last few minutes, cover top of casserole with marshmallows and brown.
