SWEET POTATO CASSEROLE 
1 (40 oz.) can yams, drained
1 (8 1/2 oz.) can crushed pineapple with juice
2 tbsp. light brown sugar
2 tbsp. melted butter
3 tbsp. chopped nuts
3/4 c. miniature marshmallows

Drain yams. Mash well. Drain pineapple, saving juice. Mix juice, yams, sugar and butter; beat well. Add pineapple and nuts. Coat inside of 1 1/2-quart casserole with cooking spray. Spoon in mixture. Bake 20 minutes at 350 degrees. Top with marshmallows. Bake 10 minutes. Serves 8.
