SWEET POTATO CASSEROLE 
4 c. sweet potatoes, mashed
1/2 c. butter, melted
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 c. brown sugar
4 eggs, beaten
1 c. evaporated milk
1 tsp. vanilla
Marshmallows

Combine sweet potato, sugar and butter. Whip in eggs and add spices, milk and vanilla. Blend well. Pour into baking dish. Top with marshmallows. Bake at 350 degrees until marshmallows are melted and brown or until done.
