CRAB MEAT AU GRATIN 
1 lb. crab meat
1/2 c. onion, chopped
1/2 c. celery, chopped
1 stick butter
1/2 c. flour
1 sm. can evaporated milk
1/2 lb. American cheese, grated
1/4 tsp. red pepper
1 sm. can whole mushrooms
Salt and pepper, to taste

Sauté onions and celery in butter. Blend flour with milk slowly stirring all the while. Add seasonings and red pepper. Put over heat once again and cook for 5 minutes while stirring. Add mushrooms and cook 5 minutes more. Add crab meat. Pour into lightly greased casserole dish. Add cheese for topping.

Bake at 350°F for 15 to 20 minutes.
