TACO CASSEROLE 
1 lb. lean ground beef
1 (16 oz.) can Western Family tomatoes
1 (6 oz.) can Western Family tomato paste
1 tbsp. chili powder
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 1/2 c. shredded cheddar cheese
3 c. tortilla chips
1/2 c. sour cream (opt.)

In a large skillet, brown meat and chopped onion. Drain grease. Stir in tomatoes, tomato paste and seasonings. Cover; allow to simmer for 10 minutes. Meanwhile, line a medium-sized casserole dish with 2 cups of tortilla chips. Pour meat sauce over chips. Top with shredded cheese, then remaining chips.

Bake in a 350 degree oven for about 25 to 30 minutes or until cheese is melted and casserole is bubbling. Remove from oven and top with a dab of sour cream. Serving Suggestion: Serve with a cold, crisp salad, vegetable sticks and cornbread.
