EXCELLENT BREAKFAST CASSEROLE 
This is best prepared a day ahead, making it perfect for holidays or company.

16 oz. Western hash brown potatoes
6 eggs, beaten
2 cups half & half
1 1/2 cups shredded cheddar cheese
1 tsp. Natures seasoning (Morton)

Coat a 9x13-inch dish with non-stick cooking spray (Pam). Brown potatoes put in bottom of dish.

Beat eggs with half & half and Natures seasoning. Put cheese on top of potatoes and top with egg mixture.

Bake at 350°F for 40 to 45 minutes or til set. Do not cover.

This is a basic recipe. I like to add some lightly browned broccoli to this. Another variation, I like is to brown 1/2 pound bacon diced up and substitute shredded Swiss cheese for a quiche lorraine type of casserole.
