SQUASH CASSEROLE | |
2 - 2 1/2 lbs. yellow squash, sliced 1/2 c. butter 3/4 c. onion, chopped 15 Ritz crackers, crushed 2 eggs, beaten Salt & pepper to taste 1/2 tsp. Tabasco sauce 1 c. sharp cheddar cheese, grated 1/2 lb. pork sausage 1 1/2 c. Ritz crackers, crushed 1/2 c. butter, melted Fry sausage; drain. Slice and cook squash until tender; drain. Saute onions in butter. Combine in a 2 quart casserole squash, 15 Ritz crackers, crushed, eggs, seasonings, cheese and sausage. Top casserole with remaining crackers and butter. Bake at 350 degrees. |
