ZUCCHINI SQUASH CASSEROLE 
4 c. zucchini, sliced
3 tomatoes, peeled and sliced
Velveeta cheese, sliced
Ritz crackers, crushed
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
Salt and pepper
1/2 stick butter, melted

Make two layers of zucchini, onion, tomatoes, pepper and cheese in a 9x13 casserole dish. Salt and pepper each layer. Spread Ritz crackers over the top and pour melted butter over the top. Bake at 350 degrees for 45 minutes covered and then 15 minutes uncovered.
