KRISTEN'S MEATBALLS WITH BBQ
SAUCE AND RICE
 
This dish is really good when served with steamed broccoli.

2 lb. ground beef (I use extra lean)
1 egg
1 cup bread crumbs (or oatmeal or crushed crackers)
1 tsp. salt
1 tsp. pepper
1 tsp. onion powder
olive oil, for frying
2-3 cups rice (your choice)

Prepare rice according to package directions.

Mix ground beef, egg, bread crumbs, salt, pepper and onion powder. Place in a pan with oil and cook until meatballs are fully done.

SAUCE:

3/4 cup fruit jam (can be any kind)
2 (12 oz. ea.) bottles barbecue sauce (your favorite)

In a separate saucepan, cook fruit jam until melted. Add barbecue sauce into fruit jam. Stir the barbecue sauce and fruit jam until well combined. Pour sauce mixture over meatballs.

Best way to serve this is to fix a bed of rice then pour meatballs over top of it... :) Enjoy!
