SPANISH NOODLES 
1/2 to 3/4 lb. ground chuck
1 sm. onion, diced
1 green pepper, diced
1 stick celery, diced
1 tsp. parsley flakes
8 oz. can sliced mushrooms
1/2 lb. diced Cheddar cheese
1/2 c. sliced stuffed olives
1/2 lg. med. egg noodles
1 can cream of tomato soup
Seasoned bread crumbs

Simmer onion, pepper, celery in small amount of oil (olive oil is especially good) until tender. Add meat; brown slowly. Add mushrooms and tomato soup, diluted with a can of water.

Cover and simmer for 30 minutes. Cook noodles. Place noodles in a greased casserole. Add diced cheese and olives to meat mixture and pour over noodles. Add crumbs on top. Bake at 325 degrees for 1 to 1 1/2 hours.
