CRUSTY HAM SOUFFLE 
2 tbsp. fine dry bread crumbs
3 tbsp. butter
1/4 c. all-purpose flour
1/4 tsp. dry mustard
1/8 tsp. salt
Dash of pepper
1 c. milk
1 c. diced fully cooked ham
1/4 c. finely chopped green pepper
1 tbsp. snipped parsley
1 tsp. grated onion
3 egg yolks
3 stiff-beaten egg whites

Grease a 1 1/2 quart souffle dish. Coat the inside with bread crumbs. Melt butter; stir in flour, mustard, salt, and pepper. Add milk. Cook and stir until thickened and bubbly. Continue 1 minute. Remove from heat. Stir in ham, green pepper, parsley, and onion. Beat yolks until thick and lemon-colored. Gradually add ham mixture, stirring constantly. Cool slightly. Gradually pour yolk mixture over beaten egg whites, folding to blend. Turn into dish. Bake in 325 degree oven 35 minutes or until knife inserted near center comes out clean. Serve immediately. Serves 4.
