UNCOOKED STRAWBERRY JAM | |
3 c. strawberries (about 1 1/2 qts.) 5 c. white sugar 1 pkg. powdered pectin 1 c. water To Prepare Fruits: Sort and wash fully ripe berries. Remove cap and stems; crush berries. To Make Jam: Put prepared berries into a large mixing bowl. Add sugar and mix well and let stand for 20 minutes, stirring occasionally. Dissolve the pectin in the water, bring to a boil and boil for 1 minute. Add pectin solution to the berry and sugar mixture and stir for 2 minutes. Pour into freezer containers or canning jars, leaving 1/2" space at the top. Cover and let stand for 24 hours or until jam is set. Store jam in a refrigerator or freezer. Keeps indefinitely in freezer. |
