TEXAS BEEF 
1 lb. ground beef
3/4 c. chopped onion
1 (16 oz.) can tomatoes, cut up
1 (15 oz.) can red kidney beans
1/2 c. quick cook rice
3 tbsp. chopped green pepper
1 1/2 tsp. chili powder
1/2 tsp. garlic salt
1/2 c. water
1/2 tsp. salt
3/4 c. shredded American cheese
Crushed corn chips

Cook ground beef and onion until brown and tender. Drain fat. Stir in undrained tomatoes, beans and uncooked rice. Add chopped green pepper, chili powder, garlic salt, water, and salt. Stir and simmer for 20 minutes. Top with cheese and cover for 3 minutes. Sprinkle cheese around edge of skillet.
