CHEESE AND BACON FRITTATA 
6 eggs
1 c. milk
1 green onion, minced
1/2 tsp. salt
1/8 tsp. pepper
1 - 4 oz. pkg. shredded cheddar cheese
6 - 8 slices cooked crumbled bacon
2 tbsp. butter, melted

Preheat oven to 400°F. Grease a 9 X 9 baking pan. In a medium bowl using wire whisk, beat eggs, milk, green onion, butter, salt, and pepper until well blended. Pour mixture into baking pan. Sprinkle cheese and bacon evenly over the top.

Bake 20 minutes or until set and golden brown.

Makes 4 main dish servings.
