VEAL SCALOPPINE | |
1 lb. veal, cut into 1 inch pieces 1/4 c. flour 1/4 tsp. salt 1/8 tsp. freshly ground pepper Oil for sauteing 2 cloves garlic, minced 2 lg. onions, chopped coarse 1/2 lb. mushrooms, quarter if large 1 lg. pepper, cut into 1/2 to 1 inch pieces 2 c. tomato sauce 1 tsp. sugar 1/2 tsp. salt 1/8 tsp. freshly ground pepper 1. Start heating oven to 350 degrees. 2. Roll the veal lightly in flour combined with 1/4 teaspoon salt and 1/8 teaspoon pepper. 3. In hot oil in skillet, saute onions, mushroom, pepper and garlic until the onion is soft. Remove to a 2 quart casserole. 4. Saute veal in oil remaining in skillet adding more if necessary. Add veal to casserole. 5. Add tomato sauce to skillet and stir to loosen bits on bottom of pan. Add to casserole with remaining ingredients. 6. Bake, covered, 1 1/2 hours or until fork tender. Serves 3-4. |
