VEAL SCALOPPINE ITALIAN 
2 lb. veal scallops 1/4 inch thick
2 tbsp. butter
1/4 lb. Prosciutto thin sliced
1/4 lb. Mozzarella cheese thin sliced
Little pepper
Juice of 1 whole lemon

Flatten veal scallops with broad size of a heavy knife until very thin. Butter the bottom of a shallow baking dish large enough to hold the meat in a single layer. Place Procuitto and cheese in layers over meat.

Sprinkling a little lemon juice over each layer. Dot with butter and season to taste with black pepper only. Bake uncovered in 350 degree oven for 45 minutes until tender.
