IDA'S SPANISH RICE 
2 1/2 c. rice
2 tbsp. bacon drippings or other grease
2 cloves garlic
1/2 onion (or 3/4 cup)
2 tsp. comino
4 tomatoes, from canned tomatoes
1/2 c. bell pepper
2 1/2 tsp. salt
2 tsp. black pepper

Brown rice, onion, garlic and comino. When rice begins to brown, add tomatoes and green peppers, salt and pepper. Add 5 cups liquid. Cover and cook without peeking 25 minutes. Serves 12 or more.

(I used Mazola instead of bacon drippings. I used canned whole tomatoes then chopped them up. For the liquid, I used the juice from canned tomatoes and added enough water to make the 5 cups.)
