ROAST PORK LOIN 
1/2 c. soy sauce
1/2 c. sherry
2 cloves minced garlic
1 tbsp. dry mustard
1 tsp. ground ginger
1 tsp. ground thyme

Blend and put 4-5 pound (I used 3 1/2 pounds) boneless pork loin in heavy plastic bag. (I use tupperware.) Marinate in refrigerator overnight. Remove roast from bag and bake uncovered for 2 1/2 to 3 hours (less for smaller roast) at 325 degrees. Baste last hour with marinade.

SAUCE:

1 (10 oz.) jar currant jelly
2 tbsp. sherry
1 tbsp. soy sauce

Heat and use as sauce.
