PORK LOIN ROAST 
1 pork loin, 4-6 lb.
Salt and pepper
Spiced crab apples

Have the butcher saw across the rib bones of roast at base of the backbone, separating the ribs from the backbone. Place roast, fat side up, on a rack in an open roasting pan. Season with salt and pepper. Insert meat thermometer in roast so the bulk is centered in the thickest part and not resting on bone or in fat.

Roast at 350 degrees for about 2 1/2 to 3 hours, or until thermometers registers 170 degrees; allow 30-40 minutes per pound.

For easy carving, remove backbone, place roast on platter and allow roast to set for 15-20 minutes. Garnish platter with spiced crab apples, heated if desired. 8-10 servings.
