CARAMEL CORN 
1/2 c. popcorn, popped
1 c. brown sugar
1/2 c. corn syrup
1 stick butter
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda

Pop popcorn. Put popped corn in a large aluminum roasting pan. Place in oven at 200 degrees to keep warm. Put brown sugar, corn syrup and butter in a 2-quart glass cup or bowl and boil for 5 minutes on high in microwave. Remove from heat and add vanilla, salt and baking soda. Stir all ingredients quickly and pour over popcorn. Mix ingredients thoroughly with popcorn until all popcorn is covered. At this time you may add 1/2 to 1 cup of roasted nuts. Put back in oven at 225 degrees for 45 minutes, stirring occasionally, at least very 15 minutes.

HINTS: A 2-quart pitcher is very easy to handle for mixture in the microwave. A bowl gets very hot and the handle on the pitcher stays cool enough to handle. If you use a wooden spoon you may leave it in bowl while cooking for easier stirring.

Since microwave ovens vary in power, you may need to adjust your cooking time.
