RAISIN PUFF'S COOKIES | |
1 c. dark seedless raisins 1/2 c. golden raisins 1 c. water 1 c. shortening 1 c. sugar 2 eggs, beaten 3 1/2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla Note: All dark or all golden raisins may be used. I use one whole box of raisins and a little more water and sprinkle a little sugar over raisins before cooking. Cook raisins in water until water is absorbed. Set aside to cool. Cream shortening, sugar, eggs and vanilla until fluffy. Sift flour with baking soda and salt. Add to cream mixture. Mix well, then add raisins. Mix very well. Roll into balls and roll in white sugar. Bake on a greased cookie sheet at 350 degrees for about 12 minutes or until light brown. Makes 6-8 dozen. |
