OAT BRAN BREAD 
2 pkgs active dry yeast
2 cups oat bran
2 tablespoons sugar
1 cup whole wheat flour
5 cups bread flour, approximately
2 teaspoons salt
1 stick (8 tablespoons) butter, softened
3 cups warm water (120-125°F)

In the bowl of a mixer fitted with dough hook combine all dry ingredients. With mixer running, slowly add warm water. Knead 4 minutes; stop and cover bowl, then wait 10 minutes. Add butter and knead another 5 minutes. Add only enough flour as is necessary to be able to knead the dough.

Turn dough out to a greased bowl, turn once to coat well. Cover and let rise until double in size.

Punch down and form into 3 loaves. Grease and lightly flour loaf pans and place dough in pans, covered, in a warm place to rise again until doubled in size.

Preheat oven to 375°F. Bake in preheated oven for about 30 minutes or until done. Remove from oven and brush top with butter. Remove from pans and cool on wire rack.

When cool, loaves may be frozen.
