POTATO PUDDING 
1 lb. (about 2 1/2 cups grated) potatoes
1/4 c. chopped onion
2 tbsp. flour
2 tbsp. butter
2 beaten eggs
1 c. milk
1 tsp. salt
1/4 tsp. pepper

Peel potatoes and grate. Mix with onion and flour. Melt butter in a shallow one quart baking dish. Spoon potato mixture into baking dish. Combine beaten eggs, milk and seasonings. Pour over potatoes. Bake at 375 degrees for 45 minutes. Cut in wedges to serve. 4 to 6 servings.
