POTATO PUDDING 
2 1/2 lbs. potatoes
2 tbsp. oil
1/2 tbsp. baking powder
Sm. onion, grated
1/2 tbsp. onion powder
1 egg

LARGE:

5 lbs. potatoes
3 tbsp. oil
1 tbsp. baking powder
Med. onion, grated
1 tbsp. onion powder
2 eggs

Grate potatoes into casserole dish you are going to bake pudding in. Grate 1/4 inch from the top of dish to give amount of potatoes you will use. Put grated potatoes into large pot - add onion, onion powder, egg, baking powder and oil. Mix well. Grease casserole dish that you grated potatoes into, and pour the whole mixture into the dish. Bake at 375 degrees for 1 1/2 hours.
