TUNA OR SALMON SCALLOP 
2 c. milk
4 tbsp. butter
5 tbsp. flour
3/4 tsp. sugar
Pinch of salt
Pinch of pepper
2 eggs, well beaten
1 c. tuna fish
1 tbsp. lemon juice
1 tbsp. parsley (optional)
1 tbsp. pimento (optional)
1/2 c. buttered bread crumbs
1/4 c. chopped onion

Make cream sauce of milk, butter and flour, add sugar, salt and pepper. Remove from heat when thickened, stir in eggs. Flake tuna (or salmon). Mix with lemon juice, onion, parsley, pimento. Combine mixtures, pour into a greased casserole. Top with buttered crumbs. Bake about 30 minutes at 375 degrees.
