TOMATOES, PEAS, BACON & CASHEWS 
4 tomatoes, halved, seeded, scooped out with pulp reserved
Salt
20 oz. frozen peas, thawed but not mushy
1/2 lb. bacon, cooked & crumbled
1/2 c. cashews
1 c. sour cream

Sprinkle inside of tomatoes with salt and turn upside down on paper towel for 20 minutes. Mix the peas, bacon, cashews, sour cream and reserved tomato pulp. Stuff mixture into tomato shells and garnish with dill. Serves 8.
