WAFFLES WITH BLUEBERRY SAUCE AND OVEN-FRY CHICKEN | |
WAFFLES: 2 or 3 eggs 2 c. milk 1 tsp. salt 4 tbsp. melted butter 2 c. flour 3 tsp. baking powder Mix egg yolks and add milk. Add flour, baking powder and salt. Add melted butter and last, fold in beaten whites of eggs. Spoon over greased hot waffle griddle until golden brown. Makes 12 waffles. BLUEBERRY SAUCE: 4 c. berries 1 c. sugar 1 tbsp. lemon juice 2-3 c. water Thoroughly pick over and wash berries. Add rest of ingredients and simmer 10 minutes. Cool before spooning over waffles. OVEN FRY CHICKEN: Wash chicken thighs and halved breasts and pat dry. Shake each piece in a paper bag with 1 cup flour to 3 pounds of chicken, seasoned with parsley, salt, pepper, paprika, garlic flakes, onion powder. Bake in cooking oil in shallow pan at 350 degrees for 1 hour, turning each piece once after 30 minutes of baking. A Cape Cod Sunday night supper. |
