LOWFAT MUFFINS 
3 c. bran cereal (low sugar content)
3 1/2 c. 1% lowfat milk
7 egg whites
1 (16 oz.) can frozen concentrate unsweetened apple juice, defrosted (do not add water)
1/4 c. unsaturated oil
Optional ingredients: 1 c. raisins, dried fruits & nuts or shredded vegetables
3 1/2 c. whole wheat flour
4 tbsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon

Preheat oven to 400 degrees. Combine bran cereal, milk, egg whites, apple juice concentrate and oil. Optional ingredients can be added. Mix well. Let sit 10 minutes. Combine remaining ingredients; add bran cereal mixture to dry ingredients.

Mixture will start to rise. Place into refrigerator until it falls. Stir 1 or 2 strokes only with wooden spoon. Pour into muffin cups. Bake 15-18 minutes.

Makes 15-20 muffins.
