LEMON CAKE TOP PIE 
1 c. sugar
1 tbsp. butter
2 eggs, separated
2 tbsp. flour
Grated rind and juice of 1 lemon
1 c. milk
1 (9 inch) pastry shell, unbaked

Cream sugar and butter. Stir in beaten egg yolks, flour, grated rind, lemon juice and milk. Fold in stiffly beaten egg whites. Pour into unbaked pie shell and bake at 450 degrees for 10 minutes. Reduce oven temperature to 325 degrees and bake 20 minutes more.
