1 lb. thinly sliced Muenster cheese
2 eggs
2 tbsp. chopped onion
1 c. Ricotta cheese
2 (8 oz.) pkgs. frozen spinach, thawed & drained

Grease 9" pie dish. Line pie dish with Muenster cheese. Mix remaining ingredients and pour over cheese. Bake at 350 degrees for 25 minutes.
