SPINACH AND CHEESE PIE | |
1 lb. fresh spinach, trimmed 1 lb. part skim ricotta cheese 3/4 c. grated lowfat Cheddar cheese 6 egg whites 1/2 tsp. pepper 1/2 med. onion, minced 1/2 c. sliced mushrooms Steam the spinach until wilted. Drain and chop fine. Beat the egg whites and mix with the remaining ingredients. Pour into a non-stick 8x8 inch baking dish and bake in a preheated 350 degree oven for 35 minutes. Serves 6-8. |
