SPINACH CHEESE PIE 
4 frozen patty shells
1 (10 oz.) pkg. frozen chopped spinach
6 eggs
1 (3 oz.) pkg. cream cheese, softened
1/4 c. shredded cheddar cheese (or up to 1 cup)
2 tbsp. sliced green onions
1 tbsp. snipped parsley
1/2 tsp. salt
Dash of pepper

Thaw shells. Roll out on lightly floured surface to fill a 10 inch pie plate. Seal edges. Let rest 5 minutes. Place in pie pan. Cook spinach (drain very well). Combine eggs and cheeses. Beat until well combined. Stir in everything else and turn into pie shell. Bake at 425 degrees for 15 minutes. Wait 10 minutes and serve.
