SPINACH AND SAUSAGE PIE 
1 lb. sweet sausages (link type) chopped
6 eggs
16 oz. pkg. mozzarella cheese, shredded
2/3 c. ricotta cheese
1/8 tsp. pepper
1 tsp. water
2 (10 oz.) pkgs. frozen spinach, defrost, drain well, squeeze to rid of water
1/8 tsp. garlic powder
2 (10 inch) pie crusts

Cook in a skillet, sausage, and garlic, drain and chop the sausage into small pieces. In large bowl, combine all ingredients except save 1 egg yolk. Mix until blended only, set aside. Place 1 pie crust into your pan or dish, fill with the ingredients and top with the other pie crust. Whip the last egg yolk and top the pie crust with yolk mixture. Bake at 375 degrees for 1 hour and 15 minutes. Let stand at least 10 minutes before serving.
