WHOLE WHEAT POPPY SEED COOKIES 
1/2 c. soft butter
3/4 c. packed light brown sugar
2 beaten eggs
1/2 tsp. vanilla extract
1/2 tsp. lemon rind
1/3 c. poppy seeds
1 c. whole wheat flour
1 c. white flour
2 tsp. baking powder
1/4 tsp. salt

1. Cream together butter and sugar. Beat until light. Add eggs and vanilla.

2. Add lemon rind and poppy seeds. Beat another five minutes.

3. Sift together dry ingredients. Add to first mixture and mix well.

4. Chill the dough about an hour. Roll to 1/4 inch thickness. Cut into your favorite shapes. Bake on a lightly greased tray 10-12 minutes at 375 degrees.
