DIABETIC FRUIT COOKIES | |
1 c. water 1/3 c. oil 2 c. raisins 2 c. flour 1 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 1 tsp. baking powder 2 tsp. liquid sweetener 2 tbsp. water 2 eggs 1/3 c. nuts Combine water, oil, raisins, cinnamon and nutmeg. Boil 3 minutes. Cool. Dissolve salt and soda in liquid sweetener and water; add to beaten eggs. Stir into cooled mixture. Add flour and baking powder; mix well. Add nuts. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees until lightly brown. Makes 3 dozen cookies. |
