MY FAVORITE CUCUMBER RELISH 
12 lg. cucumbers
1 1/2 pt. onions
4 c. sugar
1 qt. vinegar (apple cider)
2 1/2 tsp. turmeric
1/8 tsp. cayenne peppers
4 pieces stick cinnamon
2 tbsp. salt

Chop in food processor, cucumbers and onions. Mix with salt; let stand and drain. Place sugar, vinegar, turmeric, cayenne pepper and cinnamon in large pan on stove. Cook until dissolved. Add cucumbers and onions. Boil hard until clear (about 30 minutes). Seal in sterilized jars. Makes about 6 pints.
