CUCUMBER RELISH 
4 qts. ground cucumbers, unpeeled
4 lg. onions
4 green peppers
1 red pepper (optional)
2 tbsp. salt
4 tsp. mustard seed
4 tsp. celery seed
2 tsp. tumeric
1 tsp. black pepper
4 c. sugar
4 c. vinegar

Grind up cucumbers, onions and peppers. Add 2 tablespoons salt and let stand overnight. Drain and add the rest of the ingredients. Cook for 1/2 hour and when cool store in refrigerator.
