ORANGE - CUCUMBER RELISH 
1 2/3 c. chopped sweet red pepper
1 2/3 c. chopped green pepper
4 c. chopped peeled cucumbers
1/4 c. salt
1/2 c. water
3 oranges
2 c. white vinegar
2 c. firmly packed brown sugar
1/2 tsp. mustard seed
1/2 tsp. celery seed

Mix peppers, cucumbers, salt, and 1/2 cup water and let stand overnight. In morning, drain and discard liquid. Squeeze most of the juice from oranges and reserve for other use. Force pulp and rind through coarse blade of food chopper. Combine all ingredients and bring to a boil. Simmer about 10 minutes. Pour in hot, sterilized jars and seal. Makes 3 to 4 pints.
