MEXICAN TORTILLA BAKE 
1 lb. lean ground meat, divided use
1 pkg. taco seasoning
1/2 c. picante sauce
3 oz. light Velveeta cheese, cut in cubes
Non stick cooking spray
3 (8 inch) low fat flour or corn tortillas
1 (16 oz.) can fat free refried beans, divided use
low fat sour cream, optional
black olives, optional
salsa, optional

In a skillet, brown ground meat and drain off any grease or liquid. Sprinkle taco seasoning on to meat. Pour in picante sauce and Velveeta. Stir until cheese is melted and mixture is hot and bubbly.

Heat oven to 350°F. Coat pie plate with cooking spray. Place one tortilla in pie plate and spread 1/3 of the beans, then 1/3 of the meat atop the beans. Repeat layers with remaining tortillas.

Cover with foil and bake for 25 minutes or until hearted through. Garnish with sour cream, black olives and salsa.

Makes 4 servings.
