DOWN THE HATCH AVOCADO SALAD 
1 pkg. lemon gelatin
1 3/4 boiling water
2 tbsp. lemon juice
1 tbsp. prepared horse radish
1 tsp. grated onion
2 avocados, peeled and diced

Mix ingredients and chill, except for avocados, until set. Beat the jelled mixture with an egg beater or mixer. Fold in avocados. Place the mixture in an oiled mold. Serves 8.

This is a favorite for bridge club luncheons. I've been known to take it quite a few times.
