APPLE CRUMB PIE (INSPIRED BY
GRANDMA K'S)
 
5 medium large apples
1/2 cup brown sugar (packed)
1 tsp. cinnamon
2 tbsp. tapioca flour or corn starch
3/4 cup all-purpose flour
1/2 cup white sugar
1/3 cup butter
9-inch single unbaked pie crust.

Preheat oven to 400°F.

Peel, core, and thinly slice apples. Mix the brown sugar, cinnamon, and tapioca flour (or corn starch) in a small bowl. Toss with apples and let set while you prepare the crumb topping.

To prepare the crumb topping mix the flour and white sugar. Cut in the butter until fine crumbs form.

Turn the apple mixture out into the pie crust. Top with the crumb mixture.

Place the pie pan on a cookie sheet to catch any drips. Bake at 400°F for 40 to 45 minutes. Top will well browned and some juices will be bubbling through the crumb topping when done.

Notes: I like to use a mix of apples... Golden Delicious and Granny Smith work well. I find a metal pie pan gives a better bottom crust than glass.
