ZUCCHINI QUICHE IMPOSSIBLE PIE 
2 c. diced zucchini
1 tsp. butter
1 tsp. salt
1 3/4 c. milk
1/2 c. Parmesan cheese
1/4 tsp. pepper
1/2 c. Bisquick
4 eggs

Lightly saute zucchini in butter and season with salt and pepper. Place in a 2 quart casserole. Place in blender: Bisquick, milk, eggs and cheese. Blend 1 minute. Pour on top of sauteed zucchini and place in oven. Bake at 350 degrees 50 to 55 minutes.

I added 1/2 C shredded cheese instead of the Parmesan. The flavour was good, however, the quiche after 55 minutes was watery at the bottom of the dish. I would suggest one cup of Bisquick.

I sauteed the zucchini with scallions before adding the bisquick mixture. Had to bake it for a long time and it was still not set in the middle. I think I should have drained the zucchini better after sauteing. I also thought the recipe was kinda bland. Overall not a keeper for my recipe box.

My family LOVES this recipe! I have made it in larger quantities to feed 20-25 and it has worked well!! I chop the zucchini fine (with an electric chopper). It means that I do not have to saute zucchini. I also add 2-3 tbsp. fresh parsley.

I made it about a week ago using the using the suggestions of Mary (Ohio), adding onion, increasing the zucchini and adding mozzarella cheese. Making it again tonight at the family's request the same way I made it before. They loved it!

Made this tonight... very good!!! Plan on making it again but next time I think I will cut back on the eggs or increase the bisquick... it was a little too eggy... .but still very good!!!!

I sauteed 1/2 cup onions and increased the zucchini to 3 cups, and increased the butter to 1/4 cup. I only used two eggs, and added one cup of mozzarella cheese blended with the Bisquick mixture and only 1/3 cup Parmesan, and stirred it all into the zucchini mixture. I baked it in a 12 inch pie pan and it was delicious!
