POTATO CHEESE SOUP 
3 med. potatoes
1/4 c. onions, chopped
1 c. boiling water
Milk
3 tbsp. butter
2 tbsp. flour
2 tbsp. parsley
3/4 tsp. salt
Pepper
1 c. Swiss cheese

Add potatoes and onions to boiling water. Cover and cook until tender. Mash lightly; do not drain. Measure mixture and add enough milk to make 5 cups. Add remaining ingredients except for cheese. Cook until thick. Add cheese. Stir until partially melted.
