HEARTY CHEESE & POTATO SOUP 
4 med. potatoes
1 med. onion, sliced
1 quart boiling water, divided
1/2 c. diced summer sausage (opt.)
1/2 tsp. thyme
1/2 tsp. marjoram
1 1/2 tsp. salt
White pepper to taste
2 tbsp. butter
1 c. shredded sharp cheddar cheese
2 tbsp. grated Parmesan cheese

Peel potatoes and remove dark spots. Cut in quarters. Cook potatoes and sliced onion in 2 cups boiling water until tender; do not drain. Mash potatoes. Add sausage, thyme, marjoram, salt, pepper, butter, cheddar cheese and remaining boiling water. Simmer 10 minutes. Add Parmesan cheese just before serving. Makes 6 to 8 servings.
