SAVORY CHICKEN AND HEARTY
VEGETABLE SOUP
 
1 to 1 1/2 lbs cooked chicken breasts diced in large bite sized pieces
2 large carrots cleaned and cut unto 1/3 in. slices
2 stalks celery sliced in 1 inch peices
3 medium potatoes (any kind) dices into large but, bite sized pieces
1 cup onion coarsely chopped
1/2 tsp. fresh rosemary chopped fine or 1/4 tsp. dried broken up
1/2 tsp. fresh thyme chopped or 1/4 tsp. dried
1 Bay leaf
1 tbsp. fresh parsley or 1 tsp. dried
Kosher salt and fresh cracked pepper
1 large can Chicken Broth
1 cup white wine (dry) or more to taste

Put all ingredients in a 4 qt. sauce pan. Bring to boil, then reduce to medium low for at two - three hours. Remove Bay leaf. Serve.

Cooks Note: The original recipe, as submitted calls for 2 T. each rosemary and thyme, but we used less and found it to be enough; feel free to adjust to your own taste. We also added 2 cloves minced fresh garlic.
