ICICLE PICKLES | |
2 gallons cucumbers, cut lengthwise 1 pt. salt 1 gal. boiling water 1 tbsp. alum 2 qts. vinegar 8 pts. sugar 1 sm. box pickling spice (tied in cheesecloth) Day 1: Slice 2 gallons cucumbers lengthwise; put in stone jar. Add 1 gallon boiling water and 1 pint salt. Let stand covered 1 week. Stir well each day. Day 8: Drain. Cover with boiling water. Day 9: Drain. Cover with boiling water and add 2 tablespoons alum. Day 10: Drain. Mix 2 quarts vinegar and 8 pints sugar and add pickling spice (in your cheesecloth). Bring to a boil and pour over cucumbers. Day 11: Drain syrup off cucumbers and re-boil. Pour over cucumbers. Day 12: Same as day 11. Day 13: Same as day 11. Day 14: Pack pickles in jars. Pour boiling mixture over pickles; seal jars. |
