CHICKEN BREASTS WITH PEANUT
SAUCE
 
SAUCE:

1/4 c. peanut butter
1 tbsp. sherry or scotch
4 tsp. soy sauce
4 tsp. lemon juice
2 tsp. brown sugar
1 1/2 tsp. chopped garlic
1/4 tsp. Tabasco
1/3 c. water

4 chicken breasts, without skin

In saucepan combine peanut butter, soy sauce, sherry or scotch, lemon juice, brown sugar, garlic, Tabasco and water. Bring to a boil and stir until smooth. Remove from heat.

Brush skillet lightly with oil and add chicken breasts. Saute lightly until done. Transfer to dish and cover with sauce. Garnish with chopped parsley and serve.
