CHICKEN KABOBS WITH PEANUT SAUCE 
2 lg. whole chicken breasts (2 lbs.)
1/4 c. soy sauce
1 tbsp. oil
1 tsp. brown sugar
1/4 tsp. ginger
1 clove garlic, crushed

PEANUT SAUCE INGREDIENTS:

1 sm. onion, finely chopped
1/3 c. peanut butter
1/3 c. water
1 tbsp. lemon juice
1/4 tsp. coriander
3 to 4 drops Tabasco

Remove skin and cut chicken into 3/4 inch pieces. Cutting is easier if chicken is partly frozen. Mix together other ingredients for chicken marinade. Put chicken in marinade, cover, and refrigerate for at least 2 hours. For peanut sauce, cook onion in oil until tender. Remove from heat, stir in other ingredients. Heat over low heat until blended. Don't overcook or ingredients will separate. Put 4 to 5 chicken pieces on wooden skewer. Broil with tops about 4 inches from heat for 3 to 5 minutes. Turn, brush with marinade, and broil for 3 to 5 additional minutes. Serve kabobs with peanut sauce.
